The Flaming Dirty Parer.
This one will quickly become your most reached for knife in the kitchen. For small or delicate tasks this is the one; perfectly at ease whether cutting a lime for a your gin and tonic or filleting out a sea bass.
This blade has been diferentially heat-treated using clay to prevent the rapid cooling of the spine during the quench. This leaves both the aesthetic ghostly 'hamon' line, separating the softer spine of the knife from the hard and sharp edge. Besides looking awesome, this gives the blade a great amount of flex, with a couple of centimetres in this piece, very useful for filleting fish.
This is accentuated by the thin blade, with a distal taper from 1.5mm at the ricasso to 0.3mm at the tip.
