About Me
Hello! My name is Sholto and I'm the owner and knife maker at Notch Knives, based in the beautiful heart of the Cambrian Mountains, Mid-Wales.
In 2018 I left my job in advertising and decided to do something more fulfilling. I began working at a local care home and simultaneously began making knives to keep myself busy in my spare time.
This began as a hobby at first, using just hand tools and experimenting with ideas and whatever materials I could find laying around. I soon got the bug and, building on my skills and knowledge, I began to save up for more specialised equipment to help improve my skills and precision in the craft.
Over the last few years I have continued to learn new aspects of knife making, found my niche and am now confident to offer high quality carbon steel knives for the kitchen and out in the field. Each knife is made lovingly, by hand, and to the finest detail.
I have made knives for homecooks, professional chefs, outdoor instructors, marines and many more in between. Designing, experimenting, testing and retesting each step of the way.
Your Notch knife should last you a lifetime, and as such comes with a lifetime guarantee to be fixed or replaced should the blade or handle materials fail under ordinary conditions or usage.
